Tuscan Chicken in the Instapot

Instapot Tuscan Chicken



  • 2 pounds (6) Boneless Skinless Chicken Breasts sliced in half or 12 thin cut breast

  • 4 Tablespoons EVOO (extra virgin olive oil) approx. 

  • 5 cloves minced garlic

  • 2 Tablespoon of Italian seasoning

  • 2 teaspoons pink Himalayan salt

  • 1 teaspoon garlic salt

  • 2 cups chicken broth 

  • 1 1/2 cups heavy whipping cream

  • 1 cup of parmesan cheese

  • 2 cups fresh spinach chopped or torn to bits

  • ½ cup sun-dried tomatoes (we omit these) 

  • 2-3 Tablespoons of Arrows Root (Keto friendly thicking agent) 



  • Slice the chicken breasts in half if using thick chicken breast. 

  • Add the chicken breast, Italian seasoning, garlic salt, fresh garlic, and Himalayan salt into a large gallon size Ziplock bag and massage seasonings into the chicken for about 5 min. 

  • Select the Sauté setting on your Instapot and allow to heat accordingly (about 1 min)

  • When hot, add EVOO and place the chicken breast into the cooking pot using tongs (be careful).

  • Brown the chicken for about 30 seconds on each side, alternating the pieces each flip.

  • Once the chicken is brown remove from the pot.

  • Pour in chicken broth followed by heavy whipping cream. 

  • Quickly deglaze the pot, making sure that nothing is stuck on the bottom.

  • Place chicken back into the Instapot

  • Lock on the lid, close the pressure valve and cook on high pressure for 2 minutes.  

  • When your Instapot is done a beep sound should play, wait 2 minutes and then carefully and slowly release the pressure. (DO NOT OPEN INSTAPOT UNDER PRESSURE) 

  • Select the Sauté option again on your pressure cooker and bring to a slow steady simmer.

  • Mix in parmesan cheese and sun dried tomatoes (if using). S

  • Add Arrows Root (dissolve 1-2 tablespoons of Arrows Root in warm water first, similar to using cornstarch to thicken sauces. Then slowly add stirring as you go.)

  • Simmer to thicken the sauce about 2-3 min. 

  • Tear or chop spinach and add to the pot as it is simmering.

  • Serve up and enjoy!



For a creamy/thicker sauce add 2 Tablespoons of cream cheese along with the broth and heavy whipping cream.



What to serve with Tuscan Chicken:

We steam broccoli and serve Tuscan Chicken over the top.  Also, we have used Skinny Pasta found on Amazon and some local grocery stores. It is quick and easy to rinse, drain well and microwave as directed. Be as creative as you would like. We would love to hear your pairing suggestions.
