Gouda Stuffed Chicken Breast
Gouda Stuffed and Bacon Wrapped Chicken Breast
3-4 boneless skinless chicken breasts
4-8 slices of bacon (we use non-nitrate bacon)
2 cups of shredded smoked gouda cheese
4 slices of smoked gouda cheese
1 cup of baby spinach chopped
1⁄4 teaspoon cayenne pepper
1 teaspoon garlic salt
1⁄2 teaspoon smoked paprika
1⁄2 teaspoon pepper
2 Tablesppons of Kerrygold butter
Combine cayenne pepper, garlic salt, smoked paprika, and pepper in a medium bowl.
Combine shredded gouda cheese and spinach.
Butterfly each chicken breast (slice in the middle, almost all the way through but do not cut in half)
Season Chicken breast on all sides with seasoning mix (rub into ensure chicken is well seasoned)
Spread gouda/spinach mix (stuffing) between each chicken breast and fold closed.
Wrap each stuffed chicken breast with a slice of bacon and tuck a slice of Gouda cheese under the bacon.
Add 2 Tablespoons of Kerrygold butter to the skillet.
Brown in cast iron skillet over medium heat until bacon just begins to crisp a bit.
Bake in the oven at 350 degrees for about 20 minutes or until chicken is done.
